Ingredients

1 kg Potatoes
50 g Root Parsley
350 g Rice Get long varieties, they work well in this soup
3 tbsp, minus 1/2 tsp Kosher Salt That half of teaspoon is used for the minced meat
4 l water
Soup Base
350 g Carrot
250 g Onions
120 ml Sunflower oil Any other refined oils can be used for substitution
350 g Tomato paste You'll need the concentrate to achieve the rich and intense taste of tomatoes
1 tbsp Sugar
1 pod Red Chillies I used the whole dried pods, they provide different tints of flavor
5 pcs Bay leaf
1/2 tsp Allspice Use only whole peppercorns
Meatballs
1 tbsp All-purpose flour
650 g Minced Lamb You'll need coarsely minced meat for this soup, and you may also try it with beef instead
2 (medium) Eggs
1/2 tsp Black Pepper Get the whole peppercorns, as usual, as already ground pepper isn't that bright when it comes to the aroma
1/2 tsp Kosher Salt

Directions

Tomato soup with meatballs is the perfect solution for any winter lunch of a large family. Such soups are usually favored by anyone and they can also satiate any appetites.

Steps

Mince your lamb beforehand, try to keep it lean. If you want to, you may add more onions to the minced meat itself. Carefully wash all the eggs and vegetable before starting. Take a large pot and fill it with water (keep 600 ml for the soup base), bring it to boil.

To make all things go faster, peel the root parsley, carrots, onions and potatoes.

Dice the root of parsley and add to the boiling water.

Dice your potatoes into larger chunks, but not too large. Add them to the pot with boiling water.

It's highly recommended to prepare your rice by washing it. This way you'll wash away any dirt and excessive amount of starch. Keep changing the water, until it becomes almost transparent.

Add the washed rice to the main pot as soon as you finish the previous step.

Grate your peeled carrots, use the medium grater for that. It shouldn't be too thin, as you'll saute the carrots later.

Chop your peeled yellow onions as usual.

Add your chopped onions to the cast iron skillet set to the medium heat.

Transfer the carrots to the skillet as soon as the onions start browning.

While the vegetables are browning, let's start preparing the meatballs. Break the eggs and combine them with minced lamb.

Sprinkle the salt over your lamb.

As your carrots and onions are almost sauteed, add the tomato paste.

Pour the previously reserved 600 ml of water into the skillet with vegetables. Carefully mix.

Add the bay leaves, hot pepper and sugar to your sauteed vegetables.

Crush the allspice with your mortar and add it to the vegetables.

Pound the black peppercorns and sprinkle the powder over the minced lamb.

Pour the flour into the minced meat and stir until the mixture becomes smooth.

Salt the water within the pot. Use two tablespoons to make the balls out of the minced lamb mixture.

Transfer the content of the skillet into the main pot. Let it simmer just for five minutes.

Immediately serve the tomato soup with meatballs once it's done. And this variety tastes better only freshly cooked, otherwise the rice within your soup may absorb too much liquid.
