Ingredients

4 cups (500 g) All-purpose flour
2 cups (180 g) Rolled oats
8 tsp Baking powder I used the mix of cream of tartar (100 g), flour (10 g), ammonium (8 g) and baking soda (50 g)
8 tsp Cinnamon Powder
2 1/2 tsp Ground nutmeg
2 tsp Allspice
2 tsp Salt
1 1/2 tsp Cloves
8 Eggs
8 tbsp (120 g) Butter You may substitute it with margarine.
2 cups (400 g) Sugar
2 cup (560 g) Greek yogurt You can make it at home: take 2 cups (480 g) of milk, boil it, let it cool until it's warm. Then add 1 tbsp of greek yogurt (or sour cream), whisk, put in jars (leave some space!) and screw on lids. Leave in warm place for 6 hours.
1 cup (200 g) Applesauce I used the homemade applesauce. It's quite easy to make: take 3 pound (1350 g) of apples, 1/2 cup of water or apple juice/cider (120 g), juice of 1/2 lemon, 1/4 cup (50 g) sugar. Combine, cook on medium heat for 15 minutes, stirring, and process in blender. Store in the fridge or cook right away!

Spiced Carrot Cakes

That's not your ordinary carrot cake. Several spices, oats and applesauce make it pretty unique.

Gather all necessary components of this recipe before starting. Keep in mind that eggs and butter should be warmed to room temperature.

Grate your carrots. Use the side with larger holes.

Combine the flour with your oats. You may also start preheating your oven, as making the batter won't take too long.

Fill your Bundt mold with the batter, up to the top of each section, as they won't rise a lot. Bake for 30 minutes at a temperature of 180°С (360°F). The actual time may differ, depending on your oven, so check your spiced carrot cakes with a testing stick to make sure that they aren't too soggy.

After your cakes are baked, let them stand in the mold for 5-10 minutes. Use a wire rack for that. You may also try different pans and molds, that won't affect the texture. If desired, you may sprinkle them with powdered sugar, but they taste good on their own. Enjoy!
