This recipe of cranberry sauce is perfect with any kinds of roasted meats and poultry. It’s rather universal, as you may also add it to the pastry and desserts, it goes well with tea and cheese plates. Moreover, the combination of cranberries, ginger, honey and cinnamon is considered the powerful immune stimulant in cold weather.

To make this sauce you will need fresh cranberries, ginger root, cinnamon powder, sugar, liquid honey (if yours is too thick, slightly preheat it), a lemon and water.

Carefully sort the berries, wash them in sieve and let the water drain.

Transfer cranberries into the appropriate pan and add sugar to them.

Use a spoon to peel your ginger root, this way you will keep as much pulp as possible.

Thinly grate the ginger, so it should become a kind of mush.

Then grate the peel of your ripe lemon. Be careful, don't get deeper when you see the white layer. You don't need to add any bitterness to your cranberry sauce.

Squeeze the lemon to get the juice for your sauce.

Pour the required amount of tap water and stir. Bring the mixture to boil on high heat, then reduce it to low. The most part of berries should pop, it takes about eight minutes. Be careful, the hot juice tends to leave dangerous splashes, so use the lid when you aren't mixing your sauce.

Prepare the grated lemon peel and ginger root, cinnamon powder and juice. Add them to cranberries.

Stir the spices and lemon juice into the cranberries, until your mixture becomes smooth.

Keep cooking for seven minutes, until your sauce gets thick.

Let the ginger cranberry sauce cool down before combining it with your honey.

Now your cranberry sauce is ready. You may store it in the fridge, in that case transfer the sauce into an airtight container, preferably a glass jar. Or you may serve it immediately with roasted or grilled meat (not only turkey, pork chops work well with this sauce too) and fresh greens. Indulge yourself!
