Ingredients

1200 g Minced Lamb Get prime baby lamb trimmings with lower fat content
350 g Cottage cheese I used skimmed goat cottage cheese, it also adds more flavor to the meatloaf
1 cup Semolina
5 Eggs You'll need 3 whole eggs and 2 egg whites, preferably free-range and organic
250 g Eggplants
150 g White Onion Use sweeter varieties of onions in this dish
100 g Cherry Tomatoes
1 tsp Blue Fenugreek If you don't have it, you may try to substitute blue fenugreek with fennel seeds or yellow mustard seeds
1/2 tbsp Kosher Salt
100 ml Sunflower oil

The meatloaf usually seems like an ordinary dish, but you can make it withstanding by exploring new spices and varieties of meat. You won’t regret trying lamb as the basis for this recipe, but you can always substitute it with lean pork, if you don’t feel like experimenting. Regarding spices, blue fenugreek, which is also known as trigonella caerulea or utscho suneli in Georgian, is a traditional component of Georgian and Swiss cuisines. The mild aroma of its ground seeds will pleasantly surprise your family. And there are more benefits in this kind of meatloaf, like the substantial levels of niacin, selenium, vitamin B12 and zinc. All necessary amino acids are covered too.

Gather all components for the lamb meatloaf. Mince the meat beforehand, that will save you a plenty of time. You may use frozen meat as well, but make sure to unfreeze it properly.
