Directions

Such a dessert as easy nilla wafer banana pudding doesn’t require advanced cooking skills, but the result is quite impressive for efforts involved. You may store this pudding covered in the fridge for two days (then it’ll resemble tiramisu), but it’s recommended to consume this dessert while cookies are still crunchy. Grab a cup of black coffee, cappuccino, latte, or green tea, and then enjoy to the fullest.

Steps

1
Done

Prepare all the ingredients for your pudding. Wash the eggs, measure all wet and dry ingredients, let the butter soften.

2
Done

Mix sugar and cornstarch.

3
Done

Add some kosher salt.

4
Done

Mix in six yolks.

5
Done

Pour all the milk in the large saucepan to the rest of pudding ingredients, mix thoroughly, unless you love your lumps to stay.

6
Done

Place the saucepan on medium heat and cook (don’t forget to stir!) until it starts simmering. Then cook some more, about 4-7 minutes, until your pudding thickens enough.

7
Done

Take the pudding from the heat and immediately stir in butter.

8
Done

Then add some rum. After that, you must cool this dessert in the fridge for 2-8 hours.

9
Done

While you are waiting for the pudding to chill, bake nilla wafers. Start making them by mixing butter and sugar until light and fluffy (you may use an electric mixer). Add an egg.

10
Done

Add some rum in the dough.

11
Done

Sprinkle the baking powder over your cookie dough.

12
Done

Sprinkle some salt.

13
Done

Add all the flour.

14
Done

Beat the dough only to combine the mix, don’t overdo it!

15
Done

Mold cookies with the tiniest scoop you have or just take ½ tsp of dough to mold the cookies. Place them on the baking sheet with parchment paper. You should leave at least 5-cm space between each of them.

16
Done

Bake for 10-11 minutes, they should get nicely golden. Cool nilla wafers on the rack.

17
Done

Start assembling your dessert by putting one cookie at the bottom of dishes. Or you may crumble two cookies on bottom.

18
Done

Then add 2-3 tbsp of pudding into each serving dish. You should use ⅓ of all pudding in this step.

19
Done

Thinly slice bananas - use ½-⅓ of banana for each portion.

20
Done

Crush three cookies in chunks for each portion.

21
Done

Divide the rest of pudding and slice the remaining bananas.

22
Done

Crush 3-4 cookies in small bits for decoration. Repeat with other servings. Approximately the half of prepared cookies will be left, so store them for your next magnificent pudding, or add more cookies while assembling this dessert (though less nilla wafers and more banana pudding taste better).
