Time for delicious cookies! This recipe you can cook if you are short of time or if you don’t know what to cook for your evening tea. Recipe is so easy and fast, perfect for the weekend or just for guests. Cookies with condensed milk can be perfect for breakfast because cookies are high-calories. Try to cook it because you will get incredibly tasty cookies with the layer of condensed milk, the dough is so light and soft. For those who keep a diet this recipe can be modified and instead of fat ingredients you can use appropriate products for your diet. But sometimes we want something delicious and in this case cookies are the best dessert. It doesn’t take much time and money, actually, this is so cheap, you don’t need to use special backing cups and other stuff. It reminds shortcake or biscuit. Filling can be also changed, use anything you want to your taste.

Start cooking. For the first, be sure you have all ingredients. Flour (I used wholegrain flour, cookies will be a little bit brown), also this type of flour is low-calorie, that is why it is appropriate for those who keep a diet, anyway, you may also use ordinary white flour, oat flour etc. Dosage can be modified, it depends on consistence. Take 2 eggs, sugar (white or brown), sour cream (don't buy skim sour cream), butter (don't forget to cool off in the fridge because you will grate it), soda and vinegar (or lemon juice), and for the filling condensed milk. If you like caramelized milk, use it, also you can even add peanut butter. In addition, you will need a rolling pin.

For the first you should mix two eggs with sugar. You can do it with mixer, fork or whisk. Use a deep bowl to cook the dough.

Eggs must look like this: with bubbles and all consistence will rise. As a result cookies will rise when it will be done.

Add sour cream, whisk it with mixer.

Grate butter on the big grate. You can use frozen butter.

Add grated butter to the dough and mix until it will melt and dissolve.

Now it is time to add soda. Extinguish soda with vinegar or lemon juice. If you don't have vinegar or lemon you can also use boiled water 100 degrees, boiled water will react the same. Start to knead the dough. You should get the consistence which will not stick to your hands. At the beginning knead it with tablespoon or whisk but then do it by hand. Cover your hands with flour if dough sticks to your skin.

If your dough isn't dense enough, add more flour. So, you should get dough like in the photo. It is thick and it keeps shape.

Cover your done dough with a cling wrap and put it into the fridge for 15-20 minutes. Dough must cool down and get dense. Meanwhile heat the oven to 150 degrees.

After 20 minutes, when it is cooled down, cut the dough into two equal parts. Take a rolling pin and roll out one part.

Put rolled dough to the baking sheet covered with parchment paper. Wind the dough over the rolling pin. Don't smear it with butter, dough will not stick to the baking sheet.

Now smear the dough with condensed milk, also smear good the edges. All dough must be saturated with filling.

Now cover over the second layer of the dough. Attach all edges.

Put the dough into oven and bake for 15 minutes (150 degrees) then heat the oven to 190 degrees and bake for 20 minutes.

You can check biscuit if it is done. Pierce it with match and if you see wet dough on the top, leave it to bake for a while. If cookies are done, cut it into equal parts. I made little squares with the knife but you may use special forms.

Cookies are done! Spread it with icing sugar or cinnamon. These cookies taste the best with tea or coffee, also you can add honey. Treat your guests or family and no doubt they will like it. These cookies are perfect if you like condensed milk and biscuits. Enjoy this dessert and experiment with filling. These homemade cookies are so substantial that is why it will be the best to cook it for lunch or breakfast. Bon appetit!
