Cut your wedge-bone sirloin into strips. If using the short tenderloin, cut it into medallions. Sure, such way of cooking isn't absolutely traditional. but some chefs love it as it's easier to keep such slices juicy and dripping. That's the general principle, if you get the smaller cuts, it's easier to overdry the meat. |
