Sometimes we don’t know what to cook for weekend especially if you don’t have a lot of free time. Second course must be fast, delicious and substantial. For lover of meat it will be great idea to cook beef meatballs with tomato sauce. This recipe is rich of protein, fiber, zinc and iron. Beef is so healthy and delicious, that is why you can combine this recipe or eat it as main dish. Also beef meatballs with tomato sauce are dietary, because beef is less fat than pork or any other meat. For those who suffer from a shortage of haemoglobin in the blood, beef is one of the best kind of meat which can help you. You don’t have to spend all the day in the kitchen because preparing for the cooking is fast and easy, and then you will leave it for stewing. So, you cook some kind of cutlets with the filling from rice, carrot and delicious minced beef, on the top you have tomato gravy, you can also dip rusks into this sauce. The best garnish for meatballs will be buckwheat, any kind of pasta and any light vegetable salad. Bread will be unnecessary because you will eat your fill, beef isn’t high-calorie but is so substantial, and one-two meatballs will be enough for the good lunch. It reminds cutlets, but the difference is in rice and in the way of cooking. Tomato sauce add some savoury flavour and also it can be like gravy. Prepare all the ingredients for meatballs. Our process of cooking includes two parts. The first one is the work with meat and the second one is sauce. So, you should have minced beef (if you have an opportunity to mince it at home just buy a soft part without bones), flour (I used wholegrain flour, you can use any you like), one carrot, one little onion, bay leaf, black pepper, tomato paste, sugar, rice (any kind) and salt. Also you need some saucepan where you will stew meatballs. Also don't forget about seasoning for meat. The best is to use special mix of seasoning for the beef. Also put flour to the plate because it is very comfortable to roll meatballs.


Start cooking with the part one - meatballs. Boil rice. Use two glasses of water for one glass of rice. Sometimes rice can be slightly burnt but here it is a good advice how to avoid it: in advance turn off gas and put the lid on. Rice will be done and it won't burn. When it is done, wash rice in the cold water. Rice will be crumbly.


Meanwhile grate one carrot on a big grate.


Cut finely an onion and mix it with carrot.


Put minced beef into the deep bowl and add seasoning with salt.


Add carrot, half of an onion, rice and start to knead like dough. Do it by hand.


As a result you should get uniform consistence.


Form little balls from meat by wet hands. Now it is time to heat the frying pan with oil (sunflower or olive).


Put 3 tablespoons of flour to the plate and roll meatball in the flour.


Fry meatballs for 5-7 minutes on the middle fire. Add the second part of an onion and fry with meatballs.


Turn all meatballs over and continue frying, put the lid on.


Our meatballs are done. Put them all to a deep saucepan where you will stew it with gravy. Now start working with tomato sauce.


Now mix water with tomato paste and three tablespoons of flour.


Pour this mixture to the saucepan with meatballs.


Add sugar and salt to taste.


Stew meatballs with sauce for 40 minutes on the little fire.


After 40 minutes turn off the fire and leave it for 15 minutes. Our dish is done. It has a specific taste which adds savour to the ordinary dish. Beef meatballs with tomato sauce are so succulent. Try to cook this recipe and if you want you can change meat, for example, use chicken, pork, turkey or mix of the different types. Anyway, you have tasty, aromatic, healthy lunch. Bon appetit!
